This vegan-friendly banana bread is incredibly simple, perfectly sweet, and packed with wholesome ingredients. Ingredients
Wet Ingredients:
320g ripe bananas, mashed (about 3 medium bananas)
15g flaxseeds
80ml soya milk
80ml coconut oil, melted
30ml maple syrup
10ml vanilla extract
Dry Ingredients:
60g coconut or brown sugar
50g oats
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon sea salt
210g flour (plain or whole wheat)
Method
Preheat your oven to 180°C (350°F). Lightly grease a loaf tin or line it with baking paper.
Mash the bananas in a large mixing bowl.
Add the wet ingredients (flaxseeds, soya milk, coconut oil, maple syrup, and vanilla extract) and stir until smooth.
Incorporate the dry ingredients in this order: sugar, oats, baking soda, baking powder, salt, and flour. Stir until just combined—avoid over mixing.
Transfer the batter into the prepared loaf tin and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the tin for 30 minutes, then carefully transfer the loaf to a wire rack to cool completely.
